I also put a wool workshop in poros and it made nearly nothing. Put a Pottery in Phycaon which has only one clay resource nearby makes between 400- 500 denars. Just no idea how its worked out atm. Rather than build a 2nd workshop i just went with a caravan which took a while to get going to make a profit but was worth it in the end.

I've tried each type of workshop, in the best locations, completely manipulated the market to the extent there is only 1 workshop in the entire world & done what I can to control the stock in the towns. 0 money made. They just stop working. Even if it's the only workshop of that type in the world, everyone suddenly doesn't need that product.
The simple answer is, if you want to make money on a workshop, just buy a pottery workshop from a settlement with a clay resource. There are a few in the Battania lands and I always buy one in Danaustica. This is objectively true and easily observable in every single playthrough. Just try it. Nothing will make more money than a pottery workshop.
I've had moderate success with worskhops. Got a Tannery in Dunglanys and a pottery in Pen Cannoc that are making small but acceptable amounts of money.
